Crafted from 70-year-old Gamay planted in granite soils to 42 acres. It is evident that terroir is more important than technique for Mathieu and Camille. Following in their fathers footsteps, they don't want to use "techniques that diminished the gastronomic potential and flavors of the wine." Harvested late and rigorously sorted. Vinification by semi-carbonic maceration without any addition of sulfur during vinification. Aged in Burgundy barrels. Native yeast.
